BASIC CRUSTLESS QUICHE 
1/4 c. butter
5 eggs
1/4 c. flour
1/2 tsp. baking powder
1/8 tsp. salt
8 oz. cottage cheese
8 oz. Monterey Jack cheese, shredded

Melt butter and set aside. Whip eggs until fluffy, then add flour, baking powder, salt, cottage cheese, melted butter and half of the Monterey Jack cheese. Place mixture into 8x8 inch greased pan or baking dish. Top with remaining cheese.

Bake at 400 degrees for 10 minutes, then reduce temperature to 350 degrees for 30-35 minutes until top is golden. Cool 15 minutes before serving.

This recipe can be doubled and baked in 9x13 inch pan for a little longer. Also, any leftover chicken, ham or vegetables can be added to this recipe!
