BLEU CHEESE DRESSING 
1/2 c. low fat cottage cheese
2 tbsp. crumbled bleu cheese
2 tsp. lemon juice
Dash pepper
1/4 c. skim milk

In a blender container combine cottage cheese, bleu cheese, lemon juice and pepper. Cover; blend until smooth. Add milk, 1 tablespoon at a time, blending well after each addition. (Dressing will thicken while chilling.) Transfer dressing to a small bowl. Cover; chill until serving time. Makes 6 (2 tablespoon) servings.
