FRIED FISH 
Perch, catfish or buffalo fillets (or your choice)
1 egg, slightly beaten
1 c. cornmeal, seasoned with salt
1 c. oil
Lemon wedges

Wash and dry fish. Dip in egg then in salted cornmeal. Heat oil in skillet and fry fish in hot fat until brown. Turn once. Serve with lemon wedges.
