CORN SALAD 
1 green pepper, diced
1 ripe avocado, cubed
Cooked shrimp, chopped
1 apple, chopped (opt.)
1 can hearts of palm or artichoke, chopped
2 cans whole kernel corn

VINAIGRETTE DRESSING:

1 tsp. French (Dijon) mustard
Salt & pepper
1/3 c. vinegar for 1 c. oil (or 1 tbsp. vinegar for 3 tbsp. oil)

Drain whole kernel corn. Pour in salad bowl. Add all ingredients. Season with Vinaigrette Dressing (Vinaigrette must be more spicy than for regular salad).
