BARBECUED RIBS TERIYAKI STYLE | |
2 racks spare ribs (about 4 lb. total) 1 c. chicken stock 1/2 c. soy sauce 1/2 c. honey 1/2 c. apple cider vinegar 2 cloves garlic, minced 1 tbsp. grated fresh ginger Make sure the backbone is removed from the ribs. Cut each rack into 2 portions (cutting horizontally) each piece will be about 3" wide. parboil ribs for about 15 minutes. Combine the chicken stock, soy sauce, honey, vinegar, garlic and ginger in a large dish or pan. Place ribs in marinade and baste. Cover and refrigerate for at least 3 hours or overnight. Baste the ribs occasionally. Bake in the oven at 350 degrees for 45 minutes or grill on the barbecue. Baste frequently with the marinade. Serves 4 as main dish or 6 to 8 as an appetizer. |
