2 c. cooked ground meat (can be pork, beef or lamb)
2 c. mashed potatoes
2 eggs
1 sm. onion, minced
1/2 c. tomato juice or puree
1 tsp. salt
Pepper to taste

Combine meat, mashed potatoes, eggs, onion, tomato juice and seasonings. Shape into 8 patties, put into greased baking dish and brush with melted butter. Bake in oven for 30 minutes at 350 degrees. For those nights when the Helpers can only bring the basics below.
