ZUCCHINI BARS 
4 eggs
1 1/2 c. vegetable oil
2 c. sugar
1 tsp. vanilla
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
3 1/2 c. shredded zucchini
2 c. all-purpose flour

Mix well and pour in greased jelly roll pan.

Bake at 350°F for 30 minutes. When cool frost with cream cheese icing.

Cream Cheese Icing:

1 (8 oz.) pkg. cream cheese, softened
1 tsp. vanilla
1 (1 lb.) box powdered sugar
1/2 cup (1 stick) butter, softened
1 cup nuts (optional)

Cream butter and cream cheese. Add rest of ingredients. Beat until creamy and smooth. Add nuts if desired and spread on cake.
