SWEET - SOUR CHICKEN 
1 tbsp. cornstarch
1 tbsp. cold water
1/2 c. sugar
1/2 c. soy sauce
1/4 c. vinegar
1 clove garlic, minced
1/2 tsp. ground ginger
1/4 tsp. coarsely ground pepper
1 lg. can pineapple chunks

Combine in small saucepan. Cook stirring constantly over medium heat until mixture thickens and bubbles. Brush 2 (2 to 2 1/2 pounds) ready to cook broiler-fryer chickens, split in halves lengthwise, with soy mixture. Place chicken halves, skin side down, in greased shallow baking pan.

Bake in hot oven (425 degrees) for 30 minutes. Brush with soy sauce every 10 minutes. Turn chicken skin side up. Bake 30 minutes brushing occasionally with soy mixture. Drain 1 (1 pound 4 ounce) can pineapple chunks and add pineapple to chicken halves in baking pan during last 10 minutes. Serves 4.
