HOT CHICKEN CASSEROLE 
3 c. diced, cooked chicken
2 hard boiled eggs, chopped
3/4 c. diced celery
1 tbsp. chopped onion (more if desired)
Garlic to taste
1 pkg. frozen chopped broccoli, cooked
1 c. cooked rice (if desired)
1 can creamy chicken mushroom soup
3/4 c. mayonnaise
1 c. crushed potato chops

Mix all but the last three (3) ingredients together. Stir soup into mayonnaise and add a LITTLE milk to thin slightly. Toss with chicken mixture. Place in casserole dish and sprinkle with crushed potato chips. Bake at 350 degrees for approximately 30 minutes.
