PEANUT BRITTLE 
2 c. sugar
1 c. light brown sugar
1/2 c. white Karo syrup
1/2 c. water
Dash of salt
1/4 c. butter
1 tsp. baking soda
2 c. salted peanuts (skins on)

Put syrup, water and salt in 3-quart pan. When 250 degrees, thread stage, begin to stir occasionally. When 300 degrees, hard-crack stage, thread should be very brittle when dropped into cold water and smell will change. It will smell stronger.

Remove from fire; immediately add soda, stirring quickly. Pour onto greased (use butter) peanut-covered cookie sheet (large size). When cool, break with knife handle and put in jars or airtight containers.
