CINNAMON SPICED SWEET POTATOES 
4 to 4 1/2 lb. sweet potatoes, peeled and cut into 1 1/2-inch pieces
1/2 c. brown sugar
3 tbsp. apple cider or apple juice
3 tbsp. butter
1 tsp. cinnamon
1/2 c. toasted, chopped pecans (optional)

Easy Steps:

(1): In a large pan, cook potatoes in lightly salted boiling water until tender (about 20 to 25 minutes). Drain. Transfer potatoes to a greased 3-quart rectangular baking dish.

(2): In a small saucepan, combine brown sugar, apple cider (or apple juice), butter and cinnamon. Add pecans if desired. Cook until butter melts. Stir well. Pour over sweet potatoes.

Bake, uncovered, at 375°F for 35 to 40 minutes or until potatoes are tender, stirring once.

Makes 10 servings.
