MOLDED VEGETABLE SALAD 
4 env. unflavored gelatin
1/2 c. cold water
2 c. boiling water
1/4 c. lemon juice
1/4 c. sugar
2 tsp. salt
2 c. mayonnaise
2 med. size yellow onions, finely chopped
1 c. sweet green pepper, coarsely chopped
1 c. sweet red pepper, coarsely chopped
2 c. shredded cabbage
3 c. shredded carrots
1 c. celery, finely chopped

Soften gelatin in cold water in large heat proof bowl, 5 minutes. Mix in 1 1/2 cups boiling water, lemon juice, sugar and salt; stir until gelatin is dissolved.

Mix the remaining 1/2 cup water with mayonnaise in small bowl. Mix into gelatin mixture along with the onion until smooth and well blended. Stir in peppers, celery, cabbage and carrots. Pour into 10-12 cup Bundt pan. Cover and chill 4 hours.
