HOT TOMATO BREAD | |
6 Kaiser rolls 1/2 c. plus 1 tbsp. olive oil 1/2 c. chopped onions 1 tsp. minced garlic 1 lg. tomato, diced 1 (6 oz.) can tomato paste 1 tsp. dried oregano 1/4 tsp. each salt, pepper & sugar 1/2 c. sliced, pitted black olives 1/2 c. freshly grated Parmesan cheese Heat 1/2 cup of the oil in saucepan over medium heat. Add onion and garlic. Cook and stir 1 minute. Add tomatoes, tomato paste, oregano, salt, pepper and sugar. Cook and stir until well blended and slightly thickened, 4-5 minutes. Remove from heat; cool slightly. Stir in olives and 2 tablespoons of the cheese. Heat broiler. Cut rolls in half horizontally. Spread tomato mixture over cut side of rolls. Arrange on cookie sheet a few inches apart. Sprinkle with remaining cheese and drizzle with 1 tablespoon oil. Broil 8-10 inches from heat source just until hot, bubbly and slightly toasted, 1-2 minutes. Serve hot! |
