APPLE MUFFINS 
1 1/2 c. brown sugar
1 egg
1 c. sour cream
1 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
2 1/2 c. flour
1 1/2 c. chopped apples
1/2 c. coarsely chopped pecans

In a medium bowl, combine brown sugar and egg. Beat well. In another bowl, mix together sour cream, salt, soda, and vanilla. In another bowl have the flour.

Alternately add flour and sour cream mixture to sugar mixture, stirring well after each addition. Dough will be thick. Add apples and pecans.

TOPPING:

Melt 2-4 tablespoons butter and add brown sugar until mixture is crumbly. Spoon dough into paper-lined muffin pans. Sprinkle topping over top. May alter topping by adding chopped pecans.

Bake at 325 degrees for 30 minutes.
