SPANISH BULGAR 
2 tbsp. vegetable oil
1 clove garlic, minced
1/2 c. chopped onions
1 1/4 c. bulgar
1/2 c. diced green pepper (optional)
3/4 tsp. paprika
1/2 tsp. salt
1/4 tsp. ground pepper
1 pt. canned tomatoes
16 oz. can pork & beans OR 1/2 c. dry beans, cooked
1/4 c. shredded Cheddar cheese
Tomato juice OR water

In frying pan or electric skillet, saute onion, pepper, and bulgar in the oil until onion is tender and bulgar is coated with oil. Add spices, tomatoes (with liquid), and beans. Cover; bring to a boil, then reduce heat and simmer, adding tomato juice or water as necessary, until bulgar is tender (about 15 minutes. Last 5 minutes, sprinkle with grated Cheddar. 4 servings. Serve with salad. Provides 16% of daily protein allowance.
