CHEDDAR CHEESE CORN MUFFINS 
1 1/2 cup all purpose flour
1/2 cup cornmeal
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 cup sugar
1 1/2 to 2 cup shredded cheddar cheese
1 egg, beaten
1 stick butter, melted
1 cup milk
1/4 tsp. vanilla

Preheat oven to 400°F.

Mix dry ingredients together in medium bowl, then add cheese and mix. In a separate bowl, mix egg, butter, milk and vanilla together. Add this to the flour and cheese mixture and stir together. Spoon into greased muffin tins and bake for 15-20 minutes.

Yields about 18 muffins.

These are great with BBQ or chili.
