BUFFALO WINGS WITH BLEU CHEESE
DRESSING
 
1 1/2 lb. chicken wings
1/4 c. butter, melted
2-3 tbsp. hot pepper sauce
1 1/4 c. mayonnaise
5/8 c. buttermilk
1/2 tbsp. lemon juice
2 garlic cloves, crushed
1/4 tsp. lemon pepper or white pepper
3 oz. bleu cheese, crumbled

Split wings at joints. Discard tips. Spread wings on a baking sheet and bake at 325 degrees for 35 minutes. Remove chicken from tray to a bowl. Combine butter and hot sauce and pour over chicken. Toss to coat well. Cool, then refrigerate overnight.

Before serving, spread on a tray and bake for 20 minutes at 425 degrees in a preheated oven. Serve with bleu cheese dressing; combine mayonnaise, buttermilk, lemon juice, garlic and lemon pepper. Fold in cheese and refrigerate. Any leftover dressing is great for salads or as a vegetable dip.
