SALAD FOR SUPPER 
1 head lettuce
10 cherry tomatoes (more if it's lg. salad)
1 onion (red or white), sliced
1 stalk celery, sliced
1 carrot, sliced
1/2 can black olives
1/2 can green olives
4 hard-cooked eggs, sliced
Leftover lunch meat or cheese (or kielbasa, chicken, ham, steak, sausage, meatballs, hot dogs, etc.)
4 to 6 jalapeno peppers
Croutons
Bacon bits

(Cheese goes well in salad; there are so many kinds that it will be easy to get the kids to eat salad.)

Wash all vegetables. Mix all ingredients in a large bowl and serve with your favorite dressing.
