CARAMEL CANDY 
Can also be used for cake frosting!

2 cups white sugar
1 (12 oz.) can evaporated milk (Carnation)
2 egg yolks, well beaten
1/2 cup brown sugar
2 tsp. vanilla
2 tbsp. butter
1/2 cup chopped nuts (optional)

Mix together white sugar, milk and egg yolks, Bring to a boil. Add brown sugar and cook to soft ball stage (234-240°F on candy thermometer), stirring frequently.

Add vanilla, butter and chopped nuts if desired. Beat until cool. Spoon on waxed paper into individual pieces.

Cooks Note: Use of a candy thermometer is recommended.

Makes 24 to 30 pieces.
