MOLDED VEGETABLE SALAD 
2 sm. pkgs. lemon Jello
1 c. boiling water
1/2 c. grated carrots
1/2 c. mayonnaise
1 sm. onion, chopped fine
1/2 c. green pepper, chopped fine
1/2 c. celery, chopped very fine
2 c. cottage cheese
1 c. Cool Whip

Add vegetables to partially set Jello. Add mayonnaise, cottage cheese and Cool Whip. Pour in buttered mold. Let set in refrigerator overnight. Serve on lettuce.
