PEANUT BUTTER COOKIES 
1 c. sifted flour
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. shortening, soft
1/2 c. brown sugar, firmly packed
1/2 c. granulated sugar
1 egg, unbeaten
1/2 c. peanut butter
1 tbsp. water
1/2 tsp. vanilla

Have shortening at room temperature. Sift flour once before measuring. Preheat oven to 325 degrees. Sift together flour, soda, and salt and put into large bowl of mixer. Beat on #4 speed 2 minutes. Stop mixer. Scrap bowl and beaters. Add sifted flour mixture. Beat on No. 4 speed 1 minute, scraping bowl while beating. Drop by teaspoonful on prepared cookie sheet, and press lightly with a fork. which has been dipped in flour to flatten cookies and make top ridged. Bake 325 degrees for 15 to 20 minutes. Makes about 3 1/2 dozen cookies.
