MEXICAN CHICKEN CASSEROLE 
1 bag Doritos
3/4 lb. Velveeta
1 (16 oz.) can tomatoes, drained
1 (10 oz.) green chilis & tomatoes (like Rotel)
1 stewed chicken, save stock
1 chopped onion
1 stick butter

Brown onion in butter. Add cans of green chilis and tomatoes and drained tomatoes. Simmer 15 minutes. Debone cooked chicken and cut into bite-size pieces. Slice cheese 1/4 inch thick.

Soak Doritos in chicken stock for 5 minutes. Spray 9 x 13 inch pan, layer Doritos, chicken, cheese and tomato mixture. Bake at 375 degrees for 30 minutes or until bubbly. Do not over bake.
