APPLE BUTTER 
4 lbs. tart apples
2 c. cider or vinegar or water
2 tsp. cinnamon
1 tsp. ground cloves
1/2 tsp. allspice

Cut apples into pieces without peeling. Cook with cider or vinegar or water until soft. Put through a sieve. Add 1/2 cup sugar for each cup of apple pulp to the mixture. Add a dash of salt and spices, cook covered over low heat until sugar dissolves. Cook uncovered quickly, stirring constantly until thick and smooth when a bit is spooned onto a cold plate. Put in hot sterilized jars and seal.
