HEARTY MANICOTTI 
8-10 manicotti shells
1 (10 oz.) pkg. frozen chopped spinach
2 c. (1 pt.) ricotta cheese
1 egg
1/2 c. Parmesan cheese
1/8 tsp. pepper
1 1/3 c. (2 - 6 oz. cans) tomato paste
1 1/3 c. water
1/2 c. (2 oz.) shredded Mozzarella cheese

Cook shells; drain. Cook spinach. Drain. Add ricotta, egg, Parmesan cheese, pepper to spinach. Fill shells with mixture. Lay in casserole dish, 12" x 7 1/2". Combine paste and water. Pour over shells. Sprinkle Mozzarella cheese over top. Bake 30 minutes at 350 degrees.

Makes 4 to 5 servings. NOTE: Freezes well before baking.
