RICE PUDDING 
3/4 c. grain rice
1 1/2 c. water
2 eggs
2 c. milk
1/2 tsp. vanilla
1/2 tsp. nutmeg
1/3 c. sugar
1/4 tsp. salt
2 tbsp. butter, melted and cooled

Wash rice and drain. Put rice into saucepan with water. Bring to a boil. Cover, reduce heat and simmer until rice is tender and water is absorbed. Cool slightly. In a bowl, beat eggs, then add milk, sugar, nutmeg, salt and vanilla. Stir in rice and butter. Turn into a buttered 9-inch round baking dish. Place pan in hot water that comes halfway up sides.

Bake at 325°F for 45 minutes. Stir halfway through baking.

Serve warm. Add additional nutmeg.
