HADDOCK AU GRATIN 
1 lb. haddock fillets (4 fillets)
1/4 c. butter
1/4 c. flour
1/4 tsp. mustard (dry)
1 1/2 c. Cheddar cheese, grated
1 pt. milk
Salt and pepper to taste
Paprika
1/2 tsp. parsley

Lay fillets in buttered baking dish - do not overlap. Preheat oven to 350 degrees.

CHEESE SAUCE:

Melt butter; add flour, parsley, mustard, salt and pepper; stir. Add milk slowly, stirring constantly with wire whip. When smooth, add cheese. Cook until melted. Pour sauce over fish fillets. Sprinkle with paprika. Bake, uncovered 30-45 minutes until fish flakes.
