GRILLED BEEF TRI-TIP ROAST 
1 beef tri-tip (bottom sirloin) roast (approximately 2 lb.)
2 tbsp. minced onion
1 tbsp. packed light brown sugar
2 tsp. Tabasco sauce
1 tsp. chili powder
1/2 tsp. ground cumin
1/8 tsp. ground cinnamon
Salt to taste

Combine onion, brown sugar, Tabasco sauce, chili powder, cumin and cinnamon; spread evenly over roast. Place roast on grid over medium coals. Grill 30 to 35 minutes on open brazier (25-30 minutes in a covered cooker), turning frequently. (Roast will be rare to medium in doneness.)

Remove roast from grill. Allow roast to "stand" tented with foil 10 minutes for easier carving. Carve roast across the grain into thin slices. Season to taste with salt.
