"SCRUMPTIOUS" MANDARIN ORANGE
CAKE
 
1 box any type cake mix, white (disregard all directions on box)
3 lg. or 4 sm. eggs
1/2 c. oil
1 sm. can mandarin oranges, not drained

NOTE: The longer this cake sets, the better it is. It will last for days. Refrigerated.

Mix all above ingredients and bake at 350 degrees. (Can be made either in two round pans, or one oblong pan). While cake is cooking, start making icing immediately so that it can set up.

ICING:

1 (16 oz.) container Cool Whip, thawed
1 lg. pkg. instant vanilla pudding
1 lg. can crushed pineapple, drained
Coconut and/or nuts (optional)

Mix together and put in refrigerator until cake is cool. Ice the cake and refrigerate.
