PINEAPPLE HONEY-LEMON SALAD 
1 (20 oz.) can unsweetened pineapple chunks
1 1/2 c. ripe pears, unpeeled
1 1/2 c. coarsely chopped oranges
1 tbsp. lemon juice
1 tbsp. honey
2 tsp. vegetable oil
1/4 tsp. poppy seeds

Drain pineapple, saving 2 tablespoons of the juice. Combine pineapple, pears, and oranges in a bowl. Stir gently and set aside. Combine pineapple, lemon juice, honey, vegetable oil and poppy seeds in a jar or shaker. Cover and shake vigorously. Pour over pineapple mix, toss gently. Cover and chill for 24 hours. Serve on lettuce (romaine or other) leaf.
