FANTASTIC PORK FAJITAS 
1 1/2 lb. lean boneless pork
2 cloves garlic, minced
1 tsp. oregano, crumbled
1/2 tsp. cumin
1 tsp. seasoned salt
2 tbsp. orange juice
2 tbsp. vinegar
Dash of hot pepper sauce
1 tbsp. cooking oil
1 med. onion, peeled and sliced
1 green pepper, seeded and sliced
8 flour tortillas
Green onion tops, sliced (optional)
Shredded lettuce
Bottled salsa

Slice pork across grain into 1/8 inch strips. Marinate pork strips on garlic, oregano, cumin, salt, orange juice, vinegar, and hot pepper sauce for 10 minutes. Heat heavy skillet or griddle until hot (400 degrees). Add the tablespoon of oil, onion, green pepper and pork strips; stir-fry until pork is no longer pink, about 3 to 5 minutes. Serve with flour tortillas and accompany with sliced green onion, shredded lettuce, and salsa, if desired. Serves 4.
