TOMATO PIE 
3 med. tomatoes, sliced thick
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. basil flakes
1/4 c. chopped onion
1/2 c. mayonnaise
2 c. grated Cheddar cheese
1 frozen pie shell

Bake pie shell for 5 minutes at 425 degrees. "Fork" crust to keep it from rising up. Reduce heat to 400 degrees. Peel tomatoes and put into browned pie shell. Combine salt, pepper, basil flakes and onions. Sprinkle over tomatoes. Mix mayonnaise and Cheddar cheese. Seal over tomatoes. Bake for 35 minutes until cheese melts and is golden brown. Cool before cutting.
