HOT MILK SPONGE CAKE 
1 c. sifted flour
1 tsp. baking powder
1/4 tsp. salt
2 tsp. butter
1/2 c. hot milk
2 eggs
1 c. sugar
1 tsp. vanilla

Sift together the flour, baking powder and salt. Add buttermilk to milk and keep hot. Beat eggs until thick and lemon colored, about 3 minutes at high speed. Gradually add sugar, beating constantly at medium speed for 4-5 minutes. Quickly add sifted dry ingredients to egg mixture, stir until blended. Stir in hot milk mixture, blend well.

Pour into lined or greased and floured 9 inch square pan. Bake at 350 degrees for 25-30 minutes. Cool in pan for 15 minutes. Remove to rack.
