ZUCCHINI TACOS 
1 tsp. vegetable oil
1/4 lb. lean ground beef
1 sm. onion, minced
1 med. zucchini, diced
1/4 c. green chilies, chopped (opt.)
2 tomatoes, quartered
1 c. taco sauce
Taco shells
Yellow cheese, grated
Shredded lettuce
Onion, sliced

Heat oil in skillet; add crumbled ground beef and cook until meat loses its pink color. Drain off fat. Add onion, zucchini, green chilies and tomatoes. Cook slowly until zucchini is tender. Add taco sauce, reheat. Serve in heated taco shells garnished with cheese, lettuce and onion. Serves 4.
