ZUCCHINI DROP COOKIES 
1 c. zucchini, peeled & grated
1 tsp. baking soda
1 c. sugar
1/2 c. shortening (part butter)
1 egg, beaten
2 c. flour
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1/2 tsp. salt
1 c. chopped nuts
1 c. raisins

Beat thoroughly the zucchini pulp, soda, sugar and shortening. Add egg. Beat well. Sift flour and spices. Add dry ingredients with nuts and raisins. Drop by teaspoons on greased baking sheets. Bake at 375 degrees for 12-15 minutes. Makes about 3 dozen.
