SAUSAGE CORNBREAD BAKE | |
1 lb. sausage 1 lg. onion, chopped 2 eggs, lightly beaten 1 1/2 c. self-rising cornmeal 1 (17 oz.) can cream style corn 3/4 c. milk 1/4 c. vegetable oil 2 c. sharp Cheddar cheese, grated Preheat oven to 425 degrees. Grease a 10 1/2 inch skillet or a baking dish. Set aside. Brown sausage and onion in a medium skillet. Drain well. Combine eggs, cornmeal, corn, milk, and oil. Pour half of cornmeal mixture in a prepared dish. Sprinkle with sausage mixture and cheese. Pour remaining batter over top. Bake for 30-40 minutes. Let cool for 10 minutes. Makes 6-8 servings. |
