MAPLE OATMEAL BREAD | |
Serves: 32: Excellent flavored bread. Moist. 1 3/4 c. boiling water 1 scant tsp. instant coffee 1 c. rolled oats 1/3 c. shortening 1/2 c. maple syrup 5 1/2 to 6 1/2 c. sifted flour 1/2 c. sugar 2 tsp. salt 2 pkg. dry yeast 1/4 c. warm water 2 lg. eggs Combine water, coffee, oats, shortening, maple syrup, sugar and salt. Cool to lukewarm. Dissolve yeast in 1/4 cup lukewarm water and add to the first mixture. Blend in eggs. Gradually add flour and mix until smooth. Add enough flour to make a moderately stiff dough. Place in greased bowl to rise. Punch down, knead a little and shape into two loaves. Let rise again. Bake 30 - 40 minutes at 325 degrees. (For 6 1/2 cups flour use 2 large bread pans.) |
