GAYLE'S OATMEAL MAPLE MUFFINS 
1 1/2 c. flour
2 tsp. baking powder
1 tsp. salt
2 eggs
2 tbsp. brown sugar
3/4 c. milk
1/2 c. maple syrup
1/2 c. oil
1 c. quick cooking oats
1/2 c. chopped walnuts (optional)

Heat oven to 400 degrees. In large bowl mix flour, baking soda and salt. In small bowl, beat eggs, sugar, milk, syrup and oil. Add to flour mix; stir just until moistened (batter should be lumpy). Fold in oats and walnuts. Spoon batter into greased or paper lined muffin tin, filling each cup 2/3 full. Bake 20 minutes or until golden. Makes 12.

MAPLE BUTTER: Beat 1 stick butter and 1/4 cup maple syrup together until fluffy. These go great together!
