HOT MILK SPONGE CAKE 
2 eggs
1 c. all - purpose flour
1/4 tsp. salt
1/2 c. milk
1 c. sugar
1 tsp. baking powder
1 tsp. vanilla
2 tbsp. butter

Beat eggs with an electric mixer until light. Gradually add sugar; continue beating until thickened. Mix flour, salt and baking powder. Scald milk with butter. Add vanilla. Gradually add flour mixture to egg mixture. Add scalded milk, butter and vanilla all at once. Quickly mix into other ingredients. Turn into an 8 x 8 inch pan. Bake at 375 degrees about 30 minutes. Good for topping of upside - down cake.
