LEMONADE COOKIES 
1 c. sugar
2 eggs
3 c. flour
1 tsp. baking soda
1/2 c. frozen lemonade concentrate, thawed
1/2 tsp. lemon rind, optional

Cream together butter and sugar. Add eggs, beat until light and fluffy. Sift together flour and soda. Add alternately to creamed mixture with lemonade concentrate and lemon rind. Drop dough from teaspoon 2 inches apart onto ungreased cookie sheet. Bake at 400 degrees for 8 minutes or until lightly browned around edges. Makes about 4 dozen small cookies.
