FRUIT PIZZA 
CRUST:

1/2 c. butter
3/4 c. sugar
1 egg
2 c. plain flour
1/2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla

Cream together sugar and butter. Add egg and mix well. Add flour, baking powder, salt and vanilla. Mix well. Roll into a ball and chill. Roll out crust to fit pizza pan and bake in greased pan for 10 minutes at 350 degrees. Let cool.

TOPPING:

1 (8 oz.) pkg. cream cheese, softened
1/2 c. sugar

Mix well until smooth and spread over the cool crust in pizza pan.

FRUIT:

2 apples, unpeeled, sliced in wedges
2 oranges, peeled, sectioned, seeds removed (can use mandarin oranges)
1 banana, sliced
1 c. pecans
1/2 c. coconut
Strawberries, grapes, cherries, kiwi or other fresh fruit may be used

Arrange fruit on crust topped with cream cheese mixture.

GLAZE:

2/3 c. sugar
2 tbsp. cornstarch
1/4 tsp. salt
1 c. orange juice
3 tbsp. coconut (opt.)

Mix sugar, cornstarch, salt and orange juice well. Bring to a boil over medium heat, stirring constantly. Boil one minute. Cool well and spoon over pizza. Sprinkle with coconut. Chill 3 to 4 hours before serving.
