FISH SAUTE 
1 lb. fish fillet, especially good with monk, blue or drum fish
1 tbsp. butter
1 tbsp. olive oil
2-3 cloves garlic, minced or chopped

Saute garlic in hot butter or oil. Add fish and saute approximately 3 minutes each side. Do not over cook. Remove fish. Add 1 tablespoon butter or oil to pan. Take fresh Italian bread and saute in the pan used for fish to pick up the drippings. If wanted sprinkle bread with Parmesan cheese and chopped parsley.
