CREAM OF FISH SOUP 
1 tomato, chopped
2 tbsp. butter
1 c. chopped onion
1/2 c. chopped celery
2 tbsp. flour
1 c. dry white wine
1/2 tsp. saffron
1/4 tsp. thyme
1/2 tsp. basil
1 lb. fish cubed
1/3 c. heavy cream
Tony's Chacheres seasoning
Salt & pepper

Saute tomato, onion and celery in butter. Season fish with Tony's and add to tomato mixture. Saute until done. Approximately 2-3 minutes. Add flour and mix. Add cream and mix. Add seasonings and wine. Add milk until soup consistency. Add salt and pepper to taste. Cook on low (do not boil) for 30 minutes. Serves 6-8.
