KEY LARGO PORK ROAST 
2 tsp. salt
1/2 tsp. pepper
2 tsp. oregano
3 cloves garlic, crushed
1/4 c. lime juice
3 to 3 1/2 lb. boneless pork roast

In a small platter or other non-metallic container, mix the salt, pepper, oregano, garlic and lime juice. Place meat in platter and baste with marinade. Cover tightly with 2 layers of plastic wrap; refrigerate overnight. Turn roast once and spoon marinade over the top.

Reserving the marinade, roast on a rack in a foil-lined shallow roasting pan at 325 degree oven until meat thermometer registers 185 degrees 40 minutes per pound. Midway through roasting time, pour reserved marinade over meat. Makes 6 servings.
