SURPRISE MERINGUE KISSES 
3 egg whites
1 tsp. vanilla
1/4 tsp. cream of tartar
1/4 tsp. peppermint extract
Dash salt
1 c. granulated sugar
36 to 42 chocolate kisses
Colored sugar crystals

Beat egg whites, vanilla, cream of tartar, peppermint extract and salt until soft peaks form. Gradually add the sugar, about 1 tablespoon at a time. Beat until very stiff peaks form. Drop from a tablespoon, 1 1/2 inches apart, onto lightly greased cookie sheet. Press a chocolate kiss into each cookie. Bring meringue up and over candy, and swirl top. Bake at 275 degrees for 30 minutes or until set. (Sprinkle with sugar crystals before - optional.)
