CHICKEN BREASTS DIJON 
2 whole chicken breasts (1 lb. each), halved & skinned
2 tbsp. Dijon mustard
1 tbsp. lemon juice
1/4 tsp. black pepper
2 green onions, chopped fine
1/2 c. soft bread crumbs (1 slice)
Broiling rack, lightly greased

Preheat broiler and lightly grease the rack. Broil breasts 5 to 6 inches from the heat for 5 minutes. Turn and broil 5 minutes longer.

Combine the mustard, lemon juice, pepper and green onions. Coat broiled breasts with the mixture, placing them back on the rack. Sprinkle with 1/2 of bread crumbs. Broil for 2 minutes or until the crumbs are brown.

Turn breasts, sprinkle with remaining crumbs and brown (2 minutes) or until meat is no longer pink in center.
