CHICKEN OR BEEF FAJITAS 
2 lbs. boneless chicken or beef strips
1 lg. green pepper strip
1 lg. red pepper strip
1 lg. yellow pepper strip
2 med. onions, strips
1 tbsp. cumin
2 tbsp. chili powder
Oil for browning
3 tomatoes, cut in wedges

Brown chicken or beef strips in a little oil (your choice). Sprinkle with 1/2 spices, set aside and keep warm. Saute peppers and onion strips. Sprinkle with remaining spices. Add to meat and blend together. Place tomato wedges evenly over mixture. Cover to let tomatoes warm. Serve with flour tortillas.

CONDIMENTS: Put in small bowls around fajita mixture: sour cream, salsa, grated Cheddar cheese, diced Jalapeno peppers, chopped black olives.
