ZUCCHINI BREAD 
Beat together:

3 eggs
2 c. sugar
1 c. Wesson oil

Add and mix well:

2 c. raw, grated zucchini (take some water off)
2 c. flour
2 tsp. baking soda
1 tsp. salt
2 1/2 tsp. cinnamon
3 tsp. vanilla
1 c. chopped nuts
1/4 tsp. baking powder

Pour into 2 ungreased bread pans. Bake at 350 degrees for 1 hour. Do not open oven or move. Cool 5 to 7 minutes before removing from pans.
