CREAM OF MUSHROOM SOUP 
8 oz. fresh mushrooms
4 tbsp. butter
1 med. onion, chopped
1/4 c. flour
1 tsp. salt
1/4 tsp. pepper
1 (10 3/4 oz.) can condensed chicken broth
1 soup can water
1 c. half & half

Slice enough mushrooms to measure 1 cup; reserve. Chop remaining mushrooms and cook with onions in butter until tender. Stir in flour, salt, and pepper. Cook over low heat for 1 minute, stirring constantly. Remove from heat. Stir in chicken broth and water. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in half & half and reserved mushrooms. Heat through.
