FIESTA MEATLOAF 
1/2 c. chopped onion
1/4 c. chopped green pepper
2 tbsp. butter
12 oz. ketchup
1 1/2 lbs. lean ground beef
1 c. soft bread crumbs
1 egg, slightly beaten
1/2 tsp. salt
1/8 tsp. pepper

Saute onion and green pepper in butter until tender. Stir in ketchup. Combine 1/2 mixture with beef, bread crumbs, egg, salt and pepper. Form into a loaf in a shallow baking pan. Bake at 350 degrees for 1 hour. Serve remaining sauce over meatloaf.
