SPINACH LASAGNA 
2 jars Paul Newman's spaghetti sauce
2 eggs, beaten
1 (16 oz.) carton ricotta or cottage cheese
2 (10 oz.) pkgs. frozen chopped spinach, thaw & drain
1/2 c. grated Parmesan cheese, divided
1/2 (16 oz.) pkg. lasagna noodles
2 (6 oz.) pkgs. Mozzarella cheese, slices

Combine eggs, ricotta cheese, spinach and 1/4 cup Parmesan cheese. Mix well and set aside. Spread 1 cup spaghetti sauce in lightly greased 13"x9"x2" baking pan. Layer 1/2 each of uncooked lasagna noodles, spinach mixture, Mozzarella cheese and spaghetti sauce. Repeat layers. Sprinkle with remaining 1/4 cup Parmesan cheese. Cover dish securely with aluminum foil. Bake at 350 degrees for 1 hour. Let stand 10 minutes before serving. Yield: 6 servings.
